Ugali

The staple food of Tanzania, made from maize flour. It's similar to polenta and served with almost every meal. Don't expect to love it immediately – it's an acquired taste.

Nyama Choma

Grilled meat (usually goat or beef) served with ugali and vegetables. Found throughout Tanzania, especially at roadside stalls and local restaurants.

Chipsi Mayai

A popular Tanzanian omelet with chips (French fries) mixed in. Simple but delicious, found at local restaurants.

Safari Lodge Cuisine

Most lodges serve international buffets with local dishes. Expect fresh fruits, grilled meats, salads, and Asian-influenced dishes. Vegetarian options are always available.

Street Food

For adventurous eaters, try Zanzibar pizza (a stuffed flatbread), mishkaki (marinated meat skewers), and biryani. Ensure food is freshly cooked and hot.

Coffee

Tanzania produces excellent coffee. Try a cup at a local cafe or visit a coffee farm on the slopes of Kilimanjaro.
